You can either setup X, or if you don't need the graphics I think you can also cat /dev/tty0 or something similar to get a text version screen capture, don't remember the exact details, or if you run a frame buffer you can cat the frame biffer device into a file to get a graphics screen capture, not sure though how to convert it into a standard image format.
