That would be persist. I also use maxfail 0. I believe this option makes sure that pppd keeps trying to connect to your provider if the link dies. Since adding this option I have been online for 50 days without intervention. Judging from the amount of traffic received on ppp0 I gather that the link occasionaly dies, but apparently only when I am away from my computer.
