KAddressbook doesn't display UTF-8 special characters (like Umlauts) correctly. Instead, the umlaut is broken down into two ISO-8859 characters. KMail offers to set the character encoding to ISO-8859, but I don't think that's the solution to this problem - and even if it could be a workaround, KAddressbook doesn't offer it. It seems the display is only wrong in the pane on the right of the KAddressbook Default Table View initially. But after another action, e.g. adding another contact to the address book, the display in the list of contacts is wrong as well.
