I would like to build differnt "flavors", lets call them linux-server,

file is about 150 MB large.

Is there a reason to have multiple source packages, rather than having
one source package that builds multiple binaries?

I'd like to be able to build just one kernel flavor at a time, and for just one architecture.

As mentioned, you might achieve that with build profiles, even if this stretches the intended use cases for build profiles a little.
