I proceeded as follow: I have a patched version of libjpeg7-dev that Provides both libjpeg-dev and libjpeg62-dev. I preinstall it in a pbuilder chroot and then build the package with pbuilder. This work fine as long as packages do not have a _versionned_ build-dep on libjpeg62-dev (only a small number do).
