Well.. I'm editing profiles/SOMEOTHERPROFILE.preseed.... So as you ask, I'll try copying /usr/shared/simple-cdd/profiles/default.preseed to my profiles/ dir and comment out 'netcfg/get_hostname' and 'netcfg/get_domain' lines and see if it works.
