The source package still has debian/pv.doc-base, and this results in a
postinst script invoking install-docs when it is built.

I'm afraid I was mistaken about the architecture above; the i386 .deb in
fact does not have a postinst script (presumably you built it locally), but
the amd64 one does, and I expect the same for all of the autobuilt packages.

The problem seems to be that these files are contained in the .orig.tar.gz,
so you would need to explicitly remove them in the .diff.gz to override
this.
