and as there still isn't any seamonkey package, there isn't any way to use

The package 'mozilla' in stable installs fine, and there is no package
'mozilla' in testing at the moment.
Mixing testing and stable as you do is not supported, indeed, the stable
mozilla does not install (dependencies cannot be fulfilled) on a testing
system. This is not a bug.
