                -exec sed -i -e 's/\-O3//g' {} \;

(yes, that should be updated to do

export DEB_CFLAGS_MAINT_APPEND = -O2
export DEB_CXXFLAGS_MAINT_APPEND = -O2

probably with _STRIP'ing -O3.
