I've updated one of my machines to up-to-date Trixie. Confirmed that gvfs-fuse is working. Updated fuse3 to 3.17.1-1 and indeed, gvfs-fuse broke. But then even if I did a local binNMU of gvfs to build with fuse3 3.17.1-1 and gvfs-fuse is still broken. I'm going to retest it, but sure something strange is going on.
