It is good to see sanity checks doing their job. :)

What is happening here is, that the copy-host-apt-sources-and-preferences
mmdebstrap hook was told to create a chroot with the same package versions from
the host but since it found package versions to differ, this does not seem to
have been successful. The problem is further up in the log you linked to:

W: using a non-empty suite name testing does not make sense with this hook and 
might select the wrong Essential:yes package set

mmdebstrap selects the set of Essential:yes packages from the mirror coming
from the selected suite name, unless the provided suite name is the empty
string. But the sbuild autopkgtest script in debian/tests/unshare passes
"$release" to mmdebstrap. Instead it should use the empty string so that the
copy-host-apt-sources-and-preferences hook can do its job.

Thus, reassigning this bug to sbuild.
