What, as a package uploader (and maintainer), should I do differently to
avoid this? Where can I read more to understand what went wrong here and
how to not have a package blocked this way?

The binary package is (IIUC) correctly marked “Architecture: all”, so it
seems right that is what was uploaded. Yet you say this is what caused the
migration to block?

Can I simply re-build in a different way, and upload again, without the
change of package version?
