This will (or should) have been the 5.10.0-20 kernel as a post installation reboot due to either new kernel or package dependency trigger indicated in /var/run/reboot-required detected by monitoring - after which we would manually schedule an out of hours reboot - this certainly didn't happen yesterday/overnight - so this initial crash at approx 5am (GMT) today is entirely unexplained at present. No other servers in our virtual environment have shown any issues. I will arrange to get the server booted from an ISO so I can manually inspect the filesystems and extract logs from /var/log to see if there is further information available on the host.
