I had exactly the same symptoms: on upgrading to CUPS 1.2.1-3 (current version; don't know when bug appeared, as I don't print often), my printer (HP 1320nw) stopped working.
Starring at the admin screen, I realized that it read something like: Make and Model: HP LaserJet Series PCL 4/5 CUPS v1.1 ...and realized that the problem was that CUPS was using an -old- driver. I went through the "Modify Printer" dialog and changed the driver version, so it now reads: Make and Model: HP LaserJet Series PCL 4/5 CUPS v1.2 ...and it immediately worked.
