In principle, packages that where using the unsupported interface, should do the actual conversion once installed with a new enough dpkg. But if those packages get upgraded first before dpkg, then they will be left w/o the conversion, so thinking about it, you might need to add a Pre-Depends on the dpkg version introducing that support, depending on the requirements of the conversion.
