With help on #debian-gnome IRC we managed to fix both problems (they are independent). The original bug was because /usr/share/pixmaps/chromium.png is a directory, which caused an exception to be thrown, and pavucontrol did not catch it. The second problem was already fixed upstream, so I am backporting that too.
