Currently that would mean that openjdk 7 would be used, except on mips, mipsel, powerpcspe and s390. When that changes, you wouldn't have to change anything to get that change on new uploads or rebuilds. If there is a good reason to build using openjdk 7 (and not openjdk 6), you could build-depend only on openjdk-7-jdk and ask for removal of the mips and mipsel binaries. In that case wims would get build on these architectures as soon as openjdk-7-jdk is available on them. Please note that openjdk 6 will probably not be released with jessie (see bug #675495), so it might not make sense to try to get build for these architectures if they don't have openjdk 7 anyway.
