This is misinformation due to a misunderstanding on my part. The fix is in 1.6.2. At http://www.cups.org/documentation.php/doc-1.6/relnotes.html: CUPS 1.6 clients using the ServerName directive in client.conf did not work with CUPS 1.3.x or older servers (STR #4231, STR #4291) Which also explains why I do not experience the problem with a 1.5.3 server.
