I dunno much but it does seem that just pushing the three versioned packages from experimental to unstable :- a. gnome-icon-theme b. gnome-icon-theme-extras c. gnome-icon-theme-symbolic should do the trick. As I haven't done it (as do not take packages from experimental) dunno if it breaks something else. If needed/wanted can try it out.
