As it turns out, this bug only happened, because I had first upgraded to
2.27.90-1, then downgraded again to 2.27.5-1 (due to crashes in gnome-panel) and
then upgraded to 2.27.90-2.

As 2.27.90-1 had replaced the symlinks, the downgrade did not reverse that
transition, so the upgrade failed.

Downgrades are not supported, so I'm closing this bug.
