The default config expands to the following matches:
* Origin: Debian, Suite: stable
* Origin: Debian, Suite: lenny-security

Origin is gathered via lsb distro id. Codename via lsb codename.

I have the following sources:
* Origin: Debian, Label: Debian, Suite: stable, Version: 5.0.6, Codename: lenny
* Origin: Debian, Label: Debian-Security, Suite: stable, Version: 5.0, 
Codename: lenny

The first one always selects both the normal and the security queue,
because they differ by the label, not the origin.

The second one will never match, because lenny-security is never used,
nor stable-security is used as suite.
