The pdftk package contains a bundled release of an oldiText
package As you can read at

this package contains files from Sun Inc. with restricted
licenses. which are unfree or contains usage discriminations
again the use on nuclear facilities.
So we have try to wipe out the bundled iText pacakge
from pdftk and make a build agains the IText-2.1.4 release
which has got a licensing cleanup, so this package is ok from
the view of the Fedora project.
