gforge-ldap-openldap
seems to do something like phamm-ldap

slapd Maintainer seems to know how gforge-ldap-openldap do:

I discovered inside deb-specific/install-ldap.sh
called by debian/rules

# Modify /etc/ldap/slapd.conf
...
    setup)
...
        mv /etc/ldap/slapd.conf.gforge-new /etc/ldap/slapd.conf
...

anyway, I do not like to modify sldap.conf but at this time seems to be
the only solution to "activate" a new .schema file, before to choose this
solution I looking for a solution (for example if sldapd could include
*.schema
file dynamically)

A useful check could be introduce command "slaptest" to check during
phamm-ldap configuration (slaptest check if slapd.conf config file is ok)
before to activate it.

At the end if I do:

dpkg --status slapd I do not see
/etc/ldap/slapd.conf

 openldap2  (2.0.7-4) unstable; urgency=low

   * slapd.conf is no longer a conffile, and not provided by the package.
     Instead, it is only generated. closes: #81359
...
