Please give us the output of "dpkg -l ptex*", "ls -l /tec/texmf/fmt.d/*" and "grep ptex /var/lib/texmf/web2c/fmtutil.cnf" . Background: In the postin script of ptex-bin some old ptex*.cnf are removed during purge but not renamed during remove. I'm afraid you have still sitting there some entries for ptex in your fmtutil.cnf, which try to call ptex.
