Good. So I'll just need to figure out how to do the packaging right so
that when people upgrade from the combined package they get both pieces
of the new split package. I imagine that package-splitting isn't two
uncommon, so I should be able to find some documented best practices here.

Yes, indeed.

The question I meant to ask is whether you could provide the snippet I
should add to notmuch/debian/control for this package. I can get some
fields easily enough, but could use some help on a couple of them:

        Package: notmuch-mutt
        Architecture: any
        Depends: ???
        Enhances: notmuch, mutt
        Suggests: ???
        Description: ???
