At least you can select the proper printer in the dialog, but evolution of course gets all the settings wrong, and decides that by default it should be printing on A4 paper via the printer's manual input tray, despite both CUPS' web-ui and gnome-cups-manager agreeing that the default is US Letter and the main paper tray (known as Tray2) should be the input device. Fortunately you can (in *this* Gnome app, anyway), change those settings and evolution will remember them until the next time you run it, at which time you get to do it all again.
