/etc/init.d/chef-client expects to find a PID file in
/var/run/chef-client.pid, which nothing ever populates AFAICT.
/usr/share/chef/client.rb specifies the slightly different path
/var/run/chef/client.pid, but chef-client doesn't produce that
either, at least on my system; as such, you may wish to consider
removing -d from chef-client's flags and making use of
start-stop-daemon's -b (--background) and -m (--make-pidfile) flags.
At any rate, please do remedy the situation.
