I observe a somewhat similar behavior on my box running squeeze with nm 0.7.1 + nm-gnome.
I have resolvconf installed and configured to manage the /etc/resolv.conf file. If I stick to my wifi connection, the behavior I observe is the expected one: the symlink is maintained and filled with the dhcp nameserver info. However, when I use a GSM modem, upon connection the resolv.conf link has been removed and an empty file has been written by nm instead. The GSM connection is established, but no nameserver information has been put on the resolv.conf file. A quick look at the logs show that the nameserver info has been received by pppd. Usually I reconfigure resolvconf to recreate the link afterwards. On the other hand, I see no such problem when using wvdial or pon/poff to access the 3G network.
