When starting netatalk was unable to find the uams_dhx.so uam.

Yes. That's deliberate - it's due to the official Debian package
not compiled against openssl (read the README.Debian for more info).
What worries me, though, is if the DHX module was enabled in the
default config or you tried to add it yourself.
README.Debian does say that openssl is not used but doesn't say that
this means uams_dhx isn't available.
The config file says that uams_dhx is (part of) the default, though it
appears to be wrong about this.
Fixing either of these would help reduce the confusion!
