OK, I believe it. Someone with more debian experience than me
will have to come up with a way to encode this in the dependencies
of freetype and xpdf. Can freetype-2.1.10 be revised to conflict
with xpdf < 3.01 ?

Yes. It doesn't help.
When Derek releases 3.01 and you package it for Debian, don't
forget to fix #316836 (patch given).
