I must confirm that with latest update and bug I encountered 
(http://bugs.debian.org/cgi-bin/bugreport.cgi?bug=531520) helped me solve this 
whole situation.

In this whole process I noticed that bluez-gnome were removed and that 
gnome-bluetooth was installed. Fn+F5 still can't start/stop my bluetooth, but 
ever since the last update, bluetooth icon is being showed in my tray and 
everything is working just fine.
