I finally worked out what was causing Xchat to quit when Ctrl+X was pressed. It was caused by the bug at <http://bugzilla.gnome.org/show_bug.cgi?id=162726>. Basically, if you have both QWERTY and DVORAK keyboard layouts configured at the same time, then keyboard shortcuts from both layouts are in effect. I guess that in the DVORAK layout, pressing the X key on a QWERTY keyboard gets you a Q and hence Xchat quits.
