>From man maildropfilter:

For each delivery (the to[7] and cc[11] statements, and default deliveries) 
maildrop records the From: and the Subject: fields, together with the current
time, in the log file.

This doesn't work reliably. From several logs:

In this case, maildrop logged the DKIM header instead of the From: header!
Or mixed both, who knows.

the From: header:
From: "Barnikow, Katja" <katja.barni...@charite.de>

As you can see, the second line from the DKIM header 
"from:message-id:date:subject:content-type:mime-version"
was logged, followed by the "Real" From: header.

Perhaps maildrop should look for the equivalent of "^From: " instead of looking 
for "from:"
