That's what /usr/share/doc/sugar/README says how to run sugar (and there's no mention of running sugar-emulator inside that file):

You can use the SUGAR_PROFILE command line options.

SUGAR_PROFILE=profile-2 sugar

sugar-toolkit-0.82.11/src/sugar/env.py shows that if SUGAR_PROFILE isn't set, "default" will get used, so it apparently optional.

Yes, though only on one of my (real) hosts, not inside the VM. That's what puzzles me.
