Building against Experimental can be a black art at times - if in doubt,
someone should be on-hand to help in #debian-mono. Hard-coding
mono-devel (>= 2.0.1) should help, as it ensures that Experimental's
mono-devel is used (whilst using experimental for the rest by default)
