I have now installed ntpdate, although I haven't yet tested it by using
the BIOS to adjust the clock during a reset. The ntp documentation
discourages the use of ntpdate, suggesting that it shouldn't be
necessary as ntpd will do the adjustment itself, which it does, but only
after a short delay. Ntp on its own isn't a complete solution, as the
Dovecot documentation suggests.

Shouldn't the Debian package of Dovecot at least suggest both ntp and
ntpdate?
