As for using the nic- prefix, that doesn't work with pppoe-server because pppoe-server doesn't recognize the nic- prefix on the -I option, which is where it gets the name it passes down to pppd as well as where it gets the name to bind to for reading requests. Maybe pppoe-server *should* recognize the nic- prefix on the -I option, or maybe it should add the nic- prefix when it invokes pppd.
