As noted below, I have the old packages installed, and when I tried to
remove them aptitude said I needed to remove bacula-director.

None of those are in the Depends line.
However, I see that the postgresql-client-8.3 package "provides"
postgresql-client (virtual package?).

I don't think aptitude will remove an existing package just because you
remove a package it recommends.  However, given that
postgresql-client-8.3 provides postgresql-client, which looks as if it
satisfies the bacula-director-pgsql depends condition, I don't know why
there is a problem.
