mozilla-thunderbird.desktop and mozilla-thunderbird-pm.desktop in the debian/ directory of the source package. (e.g. apt-get source mozilla-thunderbird). There are basically two lines to translate: Name and Comment. I guess you figure out what to do as soon as you look into those files. If you have further questions, feel free to ask!
