Hi, this bug is a package overwrite. The overlap between ghostscript and ghostscript-doc is fixed in version 8.62.dfsg.1-2.
I did not not test if this bug will be triggered during an etch->lenny upgrade but I don't think so because packages have been renamed and /usr/share/doc/ paths will be different. As for the missing /usr/bin/ps2pdf this problem will be solved once you figure out how to work-around the package overwrite bug and upgrade to the current version. The postinst script will have a chance to execute and create /usr/bin/ps2pdf.
