OK, what do you _expect_ to happen? The es_ES.mo and WPLANG setting
will translate:

 - dates displayed
 - the login screen at wp-login.php
 - the whole administrative interface

in particular, they will not translate anything that is controlled by
the theme, such as the sections headings "Archives", "Categories",
... in the sidebar. To have those in Spanish, you need to install a
Spanish theme.
