hi Marek,

you can set emma's default encoding in its own configuration file.
in your $HOME/.emma/emmarc you can set 
  db_encoding=utf-8
to switch your default encoding.

emma is not designed to only access your local mysql server so your local
mysqlD config ist not of interest.
