Normally it should ask through debconf for a port number to run BitlBee
on. If you leave that field empty, it will skip the inetd installation.
This seems enough to me, maybe you didn't get the question because of
your debconf priority level?

Also, daemon mode is still a bit in experimental stage. For single-user
servers it's probably okay, but I would never use it if a server is
supposed to be used by more people, because it surely will give
stability problems.

So for now I'll put this back to severity wishlist.
