Until I have time to play with the GUI some more, the only way to do this is to edit the XML file directly (~/.email-reminders). The new tags are <reminder-email> and <reminder-name> and when they are placed within an <event> tag, they take precedence over what was entered in the preferences. You can have a look at /usr/share/doc/email-reminder/examples/email-reminders for an example of how to use this new feature. I hope this temporary solution works for you.
