I tried the steps above with Phalanx and noticed the same behaviour starting from the 6th turn: probably Phalanx starts doing some CPU intensive computations after some moves. Anyway, the process eating up all the CPU actually is the chess engine, not Knights. This is normal, as chess engines are very CPU hungry (and chess-related problems very hard to resolve)! Also, even if the chess engine is eating 100% CPU, my system performs with no slowdown at all. Is it the same for you, or does it make your system unuseable?
