I think I've found the problem: by having a look at the /etc/emacs22/site-start.d/ folder, I noticed 50psgml-init.el, from the psgml package. Once this package purged, I've got XML Font lock working. Once the psgml package reinstalled, I confirm that adding “-q” doesn't change anything, and that adding “-Q” makes the XML Font lock work.
