Which xserver-xorg-core and xserver-xorg-video-i810 are you using today? Could you try xserver-xorg-core 1.3 and xserver-xorg-video-intel 2.0 currently in testing? Or xserver-xorg-video-intel 2:2.0.0-5 in experimental? If it still sometimes fails to start, could you save the corresponding Xorg.0.log (or Xorg.0.log.old if X already restarted) when it happens and send it here?
