I would like to see grub with preseed support (debconf) for at least kopt, groot, xen related options and memtest, but all of them that update-grub deals with would be great. With this feature in place debian-desktop will be able to use splashy and maybe a grub background without 'tainting' servers installations with unneded eye candy; custom debian distributions will have more flexibility to avoid keep their own grub with customized menu.lst 'in house' and stuff like that.
