Please could you try out the latest version of sbuild, available here: http://people.debian.org/~rleigh/sbuild_0.54_all.deb or from SVN: svn://svn.debian.org/svn/buildd-tools/trunk/sbuild This adds a new --arch option (see the manual page for the details). This new version also obsoletes a number of options in the old sbuild, so you might be prompted to update your configuration. Please keep a copy of the old config, just in case!
