It's as I guessed: You are using gnome-volume-manager from unstable, which is patched to use pmount instead of gnome-mount, gnome-vfs2 (used by nautilus) though prefers gnome-mount over pmount. So when you insert the usb stick, pmount is used for the mounting (the password dialog is from pmount), but when you unmount the media from within nautilus, gnome-mount is used, which tears down the luks encryption differently than pmount set it up. This way, subsequent mount attempts fail. So, the bug is within gnome-volume-manager. It should prefer gnome-mount over pmount (which the version from experimental 2.15.0-1 does).
